- PEAR FLATBREAD
- 12oz pizza dough (Madre Pizza Dough Recipe Here)
- 1 small red onion, sliced
- 1 medium pear, thinly sliced
- 1/4 cup crumbled gorgonzola
- 1/4 cup chopped pecans
- Arugula
- Balsamic glaze
- Honey
- Salt & Pepper to taste
Pour a glass of Madre Wine. Cause, duh.

Prepare dough as needed if making homemade. Preheat oven to 400ºF and dust baking pan lightly with flour. Pre-bake rolled out dough for 10 minutes if using homemade. I like to drizzle with a little olive oils and sprinkle some parmesan.
Next, heat medium skillet over medium heat and add oil to pan once hot. Add the sliced onions, stirring until translucent and fragrant. Add sliced pears to the skillet to soften just slightly – about 2 minutes.
Place onions and pear slices on flatbread, add crumbled gorgonzola and chopped pecans.
Bake pizza at 400ºF for 10 minutes. Top with arugula and finish with balsamic glaze, drizzled honey, and a little parmesan. Enjoy!
